Culinary Institute of Vancouver Island (CIVI) Culinary Arts students are introduced into the challenging, exciting and much-in-demand world of professional Culinary Arts, under the tutelage of renowned chef instructors. If you enjoy the culinary arts and the creativity it offers, this program will give you the skills needed for career success. You will learn, through extensive hands-on instruction, the theory of cooking, cooking methods and techniques of food preparation such as knife skills, safety, diet and nutrition, stocks, soups and sauces, meat, poultry and seafood cookery, grilling, roasting, braising, etc. CIVI has two cafeterias as well as a fine-dining restaurant, giving our Culinary Arts students a fast-paced environment in which to gain valuable cooking experience. This program is a stepping stone towards a multitude of career opportunities in the culinary arts.
Culinary Career Opportunities
Culinary Students who excel in the Culinary Institute of Vancouver Island’s program are in demand for a wide variety of employment opportunities – from five-star hotels, to fine dining restaurants, institutions, private clubs, industrial camp kitchens, and many other culinary outlets in Canada. Well known chefs in the industry recognize the expertise of the Culinary Institute of Vancouver Island’s Culinary Arts (Professional Cook Training) graduates, and regularly contact chef instructors when culinary opportunities arise.
